1oz. lime juice
1 oz.simple syrup
3-5 fresh mint leaves
2 oz. light rum
4 oz. club soda
Ice

Add lime juice, simple syrup and mint to tall glass. Crush mint leaves using a gavel or other flat bottomed object. Add rum, club soda and ice. Stir well or shake in drink mixer.
Enjoy.

Simple syrup is made by dissolving 2 cups of sugar in 1 cup of water. Heat until sugar completely dissolves and then chill. This will keep several weeks if refrigerated. Honey may be substituted for simple syrup by combining 1 part lime with 1 part honey. This will mix better if the honey is warmed before mixing and then cooled. This mixture replaces the lime and simple syrup above. This will also keep for several weeks if refrigerated. It is also possible to substitute regular or raw sugar (cubes or granulated) for the simple syrup but it is harder to get it to dissolve.
