12 c. chopped fresh broccoli florets
1/2 c. chopped fresh cauliflower florets
1/4 c. finely chopped celery
1 c. finely chopped pimento stuffed olives, reserve 1/4 c. fluid from jar
4 cloves garlic, finely chopped
1/4 c. extra-virgin olive oil
1/4 tsp. pepper
4 c. chopped iceberg lettuce, rinsed and patted dry
1/4 lb. genoa salami, thinly sliced
1/4 lb. prosciutto, thinly sliced
1/4 lb. provolone, thinly sliced and cut into qtrs.
1/2 c. vinaigrette salad dressing

Directions:
Directions:
In a medium size bowl, combine the broccoli, cauliflower, celery, olives, olive juice, garlic, olive oil and black pepper. Let mixture called gardinere, stand for 1 hour. Place lettuce in a bowl or on a platter. Top the lettuce with the salami, prosciutto and provolone. Spoon some of the gardiniere on top. Serve with your favorite vinaigrette.
