1 (20 oz.) can crushed pineapple, drain and save juice
2 pkg. lemon Jello, dry
2 cups buttermilk
1 (16 oz.) cool whip, thawed
1 pkg. frozen coconut, thawed or use dry coconut
1 cup chopped pecans

Directions:
Directions:
Drain as much of the juice from the pineapple as possible and retain. Heat pineapple juice with dry Jello. Stir with a whisk until blended well. Let cool. Add buttermilk. Whisk again; then add rest of ingredients. Stir until mixed well. Store in refrigerator.

Memories: When Aunt Ess, Uncle Frank and the kids came home from Detroit, it was like a holiday in our family. I adored Aunt Ess; she was the sweetest person. Mother always said she was too protective of Don and Shirley. I remember one time when Harold, Doug and Joe were going swimming and wanted Don to go with them. Aunt Ess told him he couldn't go in the water until he learned to swim.
