Store fresh tomatoes in a cool (not cold) place. This will also hasten ripening, if they're a little green.

Ripe tomatoes may be kept in the refrigerator for a few days, but beyond that, the texture will degrade. Chefs say don't refrigerate. However, once tomatoes are cut, store in the refrigerator and use as soon as possible.

To peel tomatoes: Draw an "X" on the bottom with a knife, dip in boiling water 20 to 30 seconds. Plunge into cold-water bath. The skin comes right off.
