1/2 c. vidalia onion, diced
1 c. uncooked orzo
1 c. less-sodium chicken broth
1/2 c. dry white wine
2-3 T. fresh chives
1/4 tsp. dried thyme
2 T. freshly squeezed lemon juice
2 tsp. olive oil
1 1/2 lbs. sea scallops
1/4 tsp. salt
1/4 tsp. pepper

Coat medium saucepan with cooking spray. Over med-high heat, add onion and saute for 3 minutes. Stir in pasta, broth wine, and thyme. Bring to a boil. Cover, reduce heat, and simmer for 15 minutes or until liquid is absorbed. Stir in chopped chives and lemon juice. Keep warm.
For the scallops:
Heat olive oil in cast-iron skillet over med-high heat. Sprinkle scallops with s/p. Add scallops to pan and cook 3 minutes per side. Place on top of pasta mixture, sprinkle more chives and lemon juice over the top and serve.
