6 to 7 pound turkey breast (frozen or nonfrozen)
ORANGE GRAVY:
1/2 Cup Orange Juice Concentrate.
1/4 Cup all-purpose flour.
2 tsp. salt.
2 tsp. sugar.
1 tsp. grated orange peel.

If turkey is frozen, thaw turkey breast in refrigerator about 24 hours ahead. About 4 hours before serving, roast one 6 to 7 pound turkey breast in a pre-heated oven set at 325º. Before roasting, rinse with water and drain well. Insert meat thermometer into thickest part of turkey breast. Place turkey breast, skin side up, on rack in open roasting pan; brush with salad oil. Roast 3 to 3 1/2 hours. During last hour of roasting time, with pastry brush, brush turkey generously with pan drippings to give attractive sheen. Turkey is done when thermometer reaches 180º to 185º F. Remove turkey to warm platter; let stand 15 minutes for easier carving. Serve with orange gravy.
ORANGE GRAVY: Pour drippings from roasting pan into a 2-cup measure or small bowl. Let stand a few seconds until fat separates from meat juices. Skim 1/4 cup fat from drippings into a 1-quart saucepan;skim off and discard any remaining fat. Add one cup water to roasting pan; stir until brown bits are loosened; add to meat juice in cup with 1/2 orange juice concentrate to make 2 cups (add water if needed) Into fat in saucepan over medium heat, stir 1/4 cup flour until blended; gradually stir in meat-juice mixture, 2 tsp. salt, 2 tsp. sugar, 1 tsp. grated orange peel; cook, stirring constantly until mixture is thicken.

I found this recipe in a 1973 GOOD HOUSEKEEPING magazine and have used it often when I did not wish to cook up a whole turkey for Thanksgiving. Much simpler and I love the gravy. Libby
