pita bread
pizza sauce or pasta sauce
spinach
bell peppers
fresh tomato, chopped or sliced
feta cheese

Directions:
Directions:
Spread desired amount of sauce on pita bread (you can also use pesto or another sauce). Add desired amounts of veggies (I use whatever I have including roasted garlic pineapple). Top with feta cheese (or mozzarella, or both) and put under the broiler for a few minutes, watching to make sure they do not burn. Remove and enjoy!

This is a quick, easy, yummy and healthy meal. Great for kids. If you have a bit more time, you could roast veggies first (eggplant, zucchini... etc). You could also add meat.
