1 15 oz can black beans (rinsed and drained)
1 14 oz sweet canned corn
½ C celery chopped
½ C green onion chopped
1 C tomatoes, chopped
½ green pepper, chopped
¼ C fresh cilantro minced
¼ C red wine vinegar
¼ C olive oil
1 tsp Tabasco sauce
¼ tsp ground cumin
1 tsp salt
¼ tsp pepper
3 C cooked chilled rice ( I use brown rice)

Directions:
Directions:
Combine black beans, corn, celery, onion, tomatoes, green pepper, and cilantro in a large bowl. Mix well.
Mix vinegar, oil, Tabasco, cumin, salt, and pepper in a smaller bowl. Whisk together.
Pour dressing over bean mixture and add rice. Chill until service
