1/2 lb. ground beef or chicken
1 c. cottage cheese
1 c. shredded Monterey Jack cheese
1 c. tomatoes, chopped
1/3 c. onion, chopped
1 tbsp. taco seasoning mix
4 8" flour tortillas
1/2 c. mild salsa
1/2 c. shredded Colby cheese

Directions:
Directions:
Brown ground beef; drain off fat. Mix cottage cheese, Monterey Jack cheese, tomatoes, browned ground beef and taco seasoning and set aside. Spoon about 1/3 c. of cheese mixture onto each tortilla. Roll tortillas and place seam sides down in a shallow casserole. Pour salsa over enchiladas. Bake in covered casserole at 350º for 45 minutes. Uncover and sprinkle with shredded Colby cheese. Bake uncovered for 5 more minutes. Serves 4.
