1 c. pineapple juice
1/2 c. sugar
1 env. gelatin, added to 1/4 cup cold water to soften
or
1 big pkg of lime jello
1 c. grated cheddar cheese
1 c. drained pineapple
1/2 c. chopped pecans (if you want)
1 c. whipping cream

Directions:
Directions:
Boil juice and sugar and add softened gelatin or jello; cool until slightly thickened. Fold in cheese, pineapple and nuts. Then fold in whipped cream and set in fridge till firm.
