4 large beets
6 large mangoes
4 tbsp. fresh ginger, grated
4 large garlic cloves
4 red peppers
2 pkgs. raisins (not boxed)
4 cups sugar or honey
1 can orange juice
1 tbsp. cayenne
1 cup sherry
2 bottles red wine vinegar
1 pkg Pectin
Spices: nutmeg, mace, saffron, allspice, cloves (amount not given)
2 limes

Directions:
Directions:
Boil beets and mangoes. Reserve juice of beets. Grind up. Grate up peppers, ginger and garlic. Put juice of beets in heavy pan. Put in raisins and enough water to make 1 1/2 quarts. Let simmer til they fall apart. Put in peppers, garlic and remaining ingredients.
