Angel Food Cake

1 cup sifted SOFTASSILK cake flour (sift before measuring)
11/2 cups sifted confectioners sugar
11/2 cups egg whites (12)
11/2 teaspoon cream of tartar
¼ teaspoon salt
1 cup granulated sugar
11/2 teaspoon vanilla
½ almond flavoring

Directions:

•Heat oven to 375
•Measure and sift three times, flour, confectioners’ sugar
•Measure into large mixing bowl egg whites, cream of tartar, salt
(Beat with wire whip or electric mixer until foamy)
•Gradually add granulated sugar, 2 teaspoons at a time. (Beat until meringue holds stiff peaks.)
•Fold in almond flavoring
•Sift flour-sugar mixture gradually over meringue. Fold in gently just until mixture disappears.
•Push batter into ungreased 10” tube pan
•Gently cut through batter with knife
•Bake 30 – 35 minutes until top springs back when lightly touched
•Invert on funnel and hang until cold
•Serve with strawberries and whipped cream or ice with butter icing
