1 Tbs. peanut oil
2 cups whole blanched almonds (can get at H.E.B.)
1/2 cup plus 1 Tbs. sugar
1 1/2 tsp. Kosher salt
1 1/2 tsp. ground cumin
1 tsp. crushed red pepper flakes

Directions:
In a small bowl, combine 1 Tbs. sugar, and the salt, cumin and red pepper flakes. Set aside. Heat oil in large heavy bottomed saute pan over medium high heat. Add almonds and stir with wooden spoon, coating each nut with oil. Add 1/2 cup sugar and continue to stir till almonds turn golden brown and sugar carmelizes.

Remove from heat and pour almonds into a medium mixing owl. Sprinkle spice mixture over nuts and toss well. Be careful - nuts are very hot! Pour nuts in a single layer on wax paper lined cookie sheet and separate with a wood spoon. Store in an airtight container. Maybe kept up to 2 weeks if they last that long!
