For cookies:
1 c. Ground walnuts
1 c. Butter (not margarine)
3/4 c. sugar
2 1/2 c. sifted flour
1 1/2 T. vanilla or almond extract

For vanilla sugar:
2 or 3 Vanilla beans
1 lb. sifted powdered sugar

Directions:

Make vanilla sugar ahead of time:
Cut vanilla beans in long pieces.
Place in a lidded jar with the sugar.
Let stand 3 days or longer.

Combine all ingredients.
Knead to smooth dough and shape about 1 teaspoon at a time into small crescent shapes -- about 1 1/2 inches long.
Bake on an ungreased cookie sheet at 350º until slightly browned -- about 14 minutes.

When cookies are done, cool 1 minute and roll into vanilla sugar.
Cool completely and roll in the sugar again.
