1 fresh pineapple
1 box sugar-free raspberry Jello

Cut top off of pineapple (save). Cut pineapple in half lengthwise. Cut each pineapple half in half, lengthwise. Remove core from each section of pineapple. Cut pineapple from skin but let pineapple set on skin (great presentation on serving platter). Cut pineapple into slices widthwise. Cut slices in half cutting lengthwise. Sprinkle Jello over the top of pineapple, cover and chill. Ready to serve as soon as Jello dissolves. You can also use some of the "leaves" cut from the top of the pineapple as accents on the serving plate.
