1 Butternut Squash
1 onion - diced
2 tbsp oil
1- 49oz. can chicken stock
nutmeg
salt
black pepper

Directions:
Directions:
1. Cut squash in half and remove seeds
2. With a vegetable peeler, peel off skin of squash
3. Cut squash into small chunks
4. In a large pot, heat oil on medium-high heat
5. Add onions and let cook 3-5 minutes
6. Add squash and chicken stock to pot
7. Put lid on pot and cook about 20 minutes until squash is tender
8. With a slotted spoon, scoop out squash chunks and puree in a food processor or blender
9. Return puree to pot and season to taste with nutmeg, salt, and pepper
