8 c. cut-up vegetables in 1 to 2 inch pieces (carrots, sweet potatoes, onions, parsnips, turnips, potatoes, and peeled butternut squash).
1/4 c. orange juice
2 tbsp. olive oil
4 whole garlic cloves
1 tsp. chopped fresh rosemary
1 tsp. salt
1/4 tsp. pepper

Heat oven to 450º. Toss together all ingredients. Roast in roasting pan for 45 to 50 minutes. Stir occasionally, until tender and lightly brown.
