1 (9 inch) unbaked pie shell
3 eggs, beaten
1 ½ cups white sugar
½ cup margarine, melted
2 teaspoons lemon juice
1 teaspoon vanilla
1 ¼ cups coconut
½ cup chopped pecans

Directions:
Directions:
Thoroughly combine eggs, sugar, margarine, lemon juice and vanilla. Stir in the coconut and pecans. Pour in the unbaked pie shell and bake in a 350-degree oven for 50-55 minutes or until the filling is set.

I found this recipe in the Austin newspaper some years ago. It came from the Square Meal Cafeteria in Bastrop, TX. It's another WINNER!
