1 1/2 c. peanut oil
2 c. sugar
4 eggs
1 tsp. vanilla
2 c. whole-wheat flour
1 1/2 tsp. cinnamon
1 tsp. salt
3 c. grated carrots
1 c. chopped walnuts
2 tsp. baking soda

Directions:
Directions:
Combine oil and sugar. Beat in eggs. Add vanilla. In large bowl mix flour, cinnamon, salt, carrots, and walnuts. Add egg mixture to flour. Add baking soda. Grease 9 x 13 inch cake pan. Pour mixture into cake pan and bake at 325º F or 160º C for 55 minutes. Insert toothpick, if not done bake for an additional 15 to 20 minutes
