1 bunch leeks (thinly sliced)
1 tbsp. olive oil
1 can diced tomatoes(28 oz)
2 1/2 cups chicken broth
1/4 tsp. pepper
2 tbsp. long grain rice
2 tbsp. chopped fresh dill or 1 1/2 tsp. dried dill
2 cups shredded fresh spinach
1 cup shredded chedder cheese

Directions:
Saute leeks in hot oil for 5 minutes. Stir in tomatoes, chicken broth and pepper, bring to a boil. Add rice and dill, cover and simmer 20 minutes. Stir in spinach and heat through about 1 minute. Spoon into bowls and sprinkle with cheese. 4 Servings.
