1 10 3/4-ounce can chicken broth
1 cup water
1 cup uncooked converted rice
1/2 cup golden raisins
1/4 cup sliced green onions (green tops only)
1 Tablespoon chopped fresh parsley
1/4 cup dry sherry
3 Tablespoons butter
1/2 cup peanuts or silvered almonds (optional)

Directions:
Directions:
In a large saucepan bring chicken broth and water to a boil. Add rice and simmer over low heat for 25-30 minutes. Add raisins and onions after the rice has been cooking for 15 minutes. Add parsley, butter and sherry after rice has been cooking for 20 minutes. Serve when rice has absorbed all the liquid (25-30 minutes total). Fold in nuts, if desired.
