Ingredients: 1. 1 lb. chicken wings (if you prefer mini-drumsticks, separate the wing arms from the wing tips and use the tips for something else) 2. Soy sauce 3. Grape vinegar or other sweetened vinegar 4. Chili sauce or bean paste with chili 5. Salt and pepper 6. 1 cup water, beer, or rice wine

Directions:1. Salt wings and let stand at room temperature for about one hour. 2. Lightly cover bottom of large skillet with olive oil; then brown wings on medium heat adding pepper to taste as you turn the wings. 3. Add one cup water, beer or rice wine, cover skillet and cook wings for 2-3 minutes over medium heat. 4. Add soy sauce to taste and continue cooking wings in covered skillet for another 2-3 minutes. 5. Add about 2 tbsp. grape vinegar or other sweetened vinegar and continue cooking wings in covered skillet for another 2-3 minutes. 6. Add chili sauce or bean paste with chili sauce (for a more authentic Taiwanese effect) to taste and continue to cook covered over medium heat for another 2-3 minutes. 7. Turn off heat and leave wings in covered skillet until rest of meal is ready. 8. Serve over plain rice. |

Notes: The bean paste with chili can be found at better Asian food stores and makes a big difference if you want real Taiwanese.
Be careful with the vinegar. It really needs to be sweetened; otherwise, the taste may not be to your liking.
