3 or 4 cups chopped onion
2 qt. chopped celery
1/2 # oleo
4 large loaves of dry bread - cut into cubes (this equals 2 gallons of bread crumbs)
2 t. salt
1/2 t. pepper
2 t. poultry seasoning
4 eggs - slightly beaten
2 qts. broth from giblets

Directions:
Directions:
Cook giblets and neck with one medium onion (quartered) to 1 gallons of water for 2 1/2 to 3 hours or until tender. Add liver last 25 minutes of cooking time. Remove giblets & grind in feed chopper.
Pan fry onion and celery in oleo until transparent, combine all ingredients and giblets. Toss lightly - spread in 2 buttered 9 X 13 " baking pan. Bake in slow oven - 325º for about 1 hour.
Use 2 cups of flour for gravy (mix in quart jar with cold broth before adding to hot broth and turkey juice.
Chop onion and celery day before and store in covered jars in frig. Also is true with preparing the bread crumbs.

This is the recipe for the dressing that the Corbin Church uses every year for their turkey supper where they usually feed 500+ people!! I'm sure those great cooks each "adjust" it just a little!!! It was passed down to me the first year I cooked a turkey for it!!!
