1 Cup buckwheat flour.
1 Cup all-purpose whole wheat flour.
2 Tbsp. sugar.
1 tsp. baking soda.
1 tsp. salt.
2 Cups buttermilk.
1/4 Cup (1/2 stick) butter melted.
2 eggs separated.

Directions:
Directions:
Whisk all dry ingredients together in a large bowl. In another bowl, combine buttermilk, melted butter and egg yokes. Pour the wet ingredients over the dry ingredients and combine with a few quick strokes of the whisk. Do not over beat. Whip up the egg whites and fold into the batter. Heat up your griddle until a drop of water bounces off. You may need to grease your skillet or griddle lightly with butter or oil. Using a small measuring cup or ladle, pour about 1/4 to 1/3 cup batter onto griddle. Wait until bubbles appear and begin to break on the top of the pancakes before turning. Turn the cakes over and continue cooking until pancakes are golden brown. Serve at once or keep warm in a very low oven until ready to serve.
