1 lb. ground beef
1 small onion, diced
1 large carrot, julienned
3 stalks celery, chopped
2 cloves garlic, minced
2 (14.5 oz) cans dices tomatoes
1 (15 oz) can red kidney beans (with liquid)
1 (15 oz) can great northern beans (with liquid)
1 (15 oz) can tomato sauce
1 (12 oz) can of V-8 juice
1 T vinegar
1 1/2 t. salt
1 t oregano
1 t basil
1/2 t pepper
1/2 t thyme
1/2 pkg. "ditali" pasta or tiniest pasta

Directions:
Directions:
Brown ground beef in large pan over medium heat. Drain fat. Add onion, carrot, celery, and garlic and saute for 10 minutes. Add remaining ingredients, except pasta. Simmer for 1 hour. Cook pasta in 2 quarts boiling water. Cook for 10 minutes. Drain and add to soup. Simmer 10 minutes and serve.
