1 onion, chopped/diced
2 cloved of garlic, minced
2 stalks celery, chopped
4-5 new potatoes (OR 2 large), chopped/diced small
2 cups homemade chicken/veggie stock OR 1 box storebought stock
1 28-oz can diced tomatoes + 1 can of water
1 package (about a pound) frozen seafood medley (usually a combination of mussels, baby octopus, clams, shrimp, etc) (I have found this at Schnucks)
salt, pepper, thyme, marjoram

Directions:
Directions:
Saute onion, celery and potatoes in olive oil for 5-7 min. Add garlic and stir til fragrant.
Add spices and stir well.
Add tomatoes, stock, and water; bring to a boil.
Simmer on medium heat for 30 min until potatoes are tender.
Add seafood medley (thawed) and cook 3-5 min til cooked through. Don't overcook seafood; add when ready to sit down at the table.
Serve immediately with fresh bread
