15 jalapenos, preferable red, cut in 1/2, seeded & deveined
1 T canola oil
1/4 c minced red onion
1/4 c minced red bell pepper
3 T minced garlic
2 lbs mild Italian sausage, casings removed
2 c mascarpone or cream cheese
1/4 c grated Parmesan, plus more for garnish
salt & pepper
1/2 c shredded mozzarella cheese
minced chives

Preheat oven to 300º. Place jalapenos on a sheet tray & roast for 5 min. Remove from oven & let cool. Heat oil in a medium saute pan. Add onions, peppers, garlic & sausage and cook for about 2 min. Remove & place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly & season with salt & pepper. Place approx. 1 T of mixture in each jalapeno half, & top with 1/2 tsp mozzarella cheese. Place tray of peppers in oven for 5 min until mozzarella cheese melts. Garnish with chives & mozz cheese.
