Ingredients:  
8 c. thinly shredded yellow squash
2 c. thinly shredded onion
4 bell peppers (red and green peppers for color)thinly shredded
2 c. white vinegar
2 tsp. celery seed
2 tsp. mustard seed
3 c. white sugar

Directions:
Directions:
Combine squash and onions, sprinkle and cover with salt and set aside for 1 hour.

Add peppers and stir and mix together, rinse and drain in colander.

Combine sugar, vinegar and seeds --bring to a boil.

Add vegetables and return to boil just long enough to heat through together.

Place in jars. Yields 4 pt. jars

This southern relish is good on hotdogs, with pinto beans and as an appetizer served over a block of cream cheese with crackers.
