3 cups sifted flour
2 cups sugar
2 tsp cinnamon
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tsp baking powder
1 can (8 3/4 oz.) crushed pineapple
2 cups grated carrots
3 eggs, beaten
1 1/2 cup salad oil
2 tsp vanilla

Directions:

Grease and lightly flour bundt pan. Mix together flour, sugar, cinn, soda, baking powder and salt. Drain pineapple juice and put in dry mix. Add eggs, oil,and vanilla. Beat 3 minutes. Remove from mixer. Stir in pineapple, carrots, and nuts. Bake 325 degrees for about 1 1/2 hours. Cool on rack in pan for 10 min. before unmolding.

Currant Icing:
4 1/2 cups powdered sugar
2 tsp vanilla
1 pkg cream cheese
1/2 cup currents and nuts
1/4 cup butter
2 tbs milk.
Plump currants over boiling water, drain well on paper towel, Beat sugar, cheese, butter, milk and vanilla. Spread on cooled cake.

Such a good carrot cake. I remember Aunt Martha making this when I was a kid and how much I loved it. The currant frosting is unusually good, and different.(by Mauri Rollins Galloway)
