1-1/2 c. all-purpose flour
1 tsp. baking soda
1/2 c. sugar
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1 c. vegetable oil
1-1/2 c. dark brown sugar (packed firmly)
3 large eggs
1/2 c chopped walnuts (toasted or not)
1/2 c. canned crushed pineapple(drain the juice)
1/2 c. raisins or cranraisins
1 c. finely shredded carrots

Directions:

Stir first 5 ingredients into a mixing bowl.

In a separate bowl, whisk together the oil, sugar and eggs.

Add the next 4 ingredients and stir

Grease and flour a 9" sq. pan or 4 (3" x 6") mini-loaf pans.
(fill the pans 2/3 full with batter)

Bake art 350º for about 40 min. (Mini loaves take about 30 min.)
