2 C all purpose flour, 1/2 C sugar, 3 tsp. baking powder, 1/2 tsp. salt, 3/4 C milk, 1/3 C veg. oil, 1 egg,
For Blueberry muffins, stir in 1 C fresh or frozen blueberry's and 1 tsp. grated lemon or orange peel.

Heat oven to 400 degrees , grease bottoms only of 12 reg. muffin cups. In medium bowl, mix flour, sugar, baking soda and salt. In small bowl, beat milk, oil, and 1 egg until well blended ( will be lumpy), Pour in cups. Bake 20 - 25 minutes or until tooth pick comes out clean. Cool.
