1 3/4 c sugar
3 eggs
1 c oil
2 c shredded zucchini
3 t vanilla
3 c flour
1/2 c cocoa
1 1/4 tsp salt
1 t baking soda
1 t cinnamon (optional)
1/4 t baking powder
1/2 c chocolate chips (optional)
1/2 c chopped nuts
Directions:
Directions:
Combine sugar, eggs, and oil; blend well. Stir in zucchini and vanilla. Combine dry ingredients; stir into zucchini mixture just until blended. Stir in chocolate chips and nuts. Pour into 2 lightly greased loaf pans. Bake at 350º for 1 hour or until toothpick comes out clean.
