1 1/2 Cups Graham cracker crumbs (or pre-made)
5 Tbsp. Butter, melted
1 Cup + 1 Tbsp. Sugar
3 8-oz. Pkg. Cream Cheese, softened
1 tsp Vanilla
1 Cup Pumpkin
3 Eggs
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Allspice
3/4 Cup Powdered Sugar
Whipped Cream (optional)

Preheat oven to 350º.
Make the crust by combing graham cracker crumbs, butter & 1 Tbsp. sugar. Press crumbs onto bottom & 2/3 the way up the sides of springform pan. Bake for 5 mins., then set aside.
In a large mixing bowl combine cream cheese, 1 cup sugar & vanilla. Mix until smooth.
Add pumpkin, eggs, cinnamon, nutmeg, allspice & powdered sugar, continue beating until creamy.
Pour filling into crumb pan & bake 60-70 mins. Top will be a bit darker. Remove from oven & allow to cool. Once room temp, put in refrigerator.

Top with whipped cream when serving if you like it.

You can use pumpkin pie mix instead of canned pumpkin, 2 eggs, nutmeg & allspice. You will still need 1 egg & cinnamon.
