1 1/2 package (12 oz. light cream) rm. temp
1/4 cup butter, room temp.
1 1/2 cups confectioners sugar
1 tablespoon frozen orange juice
1 teaspoon grated orange zest
Cake:
1 3/4 cup Robin Hood nutri- Flour blend
1/4 cup ground flax or chia seeds
2 teaspoons baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon salt
1 cup pure pumpkin
1 cup brown sugar not packed
3/4 cup buttermilk
1/4 cup vegetable oil (such as Safflower)
3 eggs
1 teaspoon vanilla
2 cups finely chopped grated carrots
1/2 cup chopped walnuts
1/2 cup sweetened finely shredded cocoanut.

In a medium bowl, beat together cream cheese,and butter until well blended. gradually add icing sugar and beat until well blended. Add orange juice concentrate and orange zest and mix well.Cover and refrigerate until ready to use.
To frost cake, place one layer on a pretty platter. spread 1 cup frosting over top. Top with second layer. frost top and sides with reaming frosting. If desired press finely chopped walnuts into sides of cake
CAKE:
To make cake, preheat oven to 350º. Lightly grease two 9 inch round cake pans. Cut circles of parchment paper to fit bottoms. Lightly grease paper. Set pans aside.
Using low speed of mixer. beat together pumpkin, brown sugar,buttermilk, oil,eggs and vanilla until well blended. Add dry ingredients to wet ingredients and mix using a wooden spoon just until dry ingredients are moistened. Do not use a an electric mixer for this step. Gently fold in carrots, walnuts, and cocoanut.
Divide batter evenly among baking pans. bake on middle rack for 30 minutes. or until a toothpick comes out clean inserted in the middle of cake.l Cool cakes on wire rack for 10 minutes. Remove cakes from pans and cool completely before icing.
