2 pkg. (3 oz.) of Jell-O Lemon Gelatin
1 1/2 c. sugar
1/4 tsp. salt
2 c. boiling water
1 1/2 tsp. grated lemon rind
2/3 c. lemon juice
3 1/3 c. (2 big cans) evaporated milk CHILLED!

Crust: (Make first and allow to cool)
2/3 c. melted butter
6 T. sugar
2 1/2 c. graham cracker crumbs

Directions:
Combine the ingredients for the crust and press into bottom and sides of 9x13 pan. Bake 350º for 8 min. Cool
Filling:
Dissolve gelatin, salt and sugar in boiling water. Add lemon rind and juice. Chill until very thick. Add evaporated milk and whip until fluffy. Pour into prepared crust. Sprinkle with extra crumbs on top. Chill until firm.
