3 eggs
1 cup salad oil
2 cups brown sugar
2 cups grated zucchini
3 tsp vanilla
3 cups sifted flour
1 tsp salt
1tsp soda
1/2 tsp baking powder
3 tsp cinnamon or variation of spices listed below
1/2 cup nuts, if desired

Directions:
Directions:
Mix eggs, salad oil, and brown sugar. Add zucchini, vanilla, flour, salt, soda, baking powder, and cinnamon

.For variation add 1 tsp cinnamon,1 tsp allspice, 1/2 tsp allspice,1/2 tsp ginger and 1/2 tsp nutmeg. Mix well and pour into greased loaf pans.

Bake 45 min at 325 degrees.

A good way to use up all that zucchini that seems to come by the bushels out of our gardens or from the neighbors that are desperate to give theirs away!
