1 cup refried beans or black beans
1 cup mayonnaise
1 carton (8 oz.) sour cream
1 pkg. taco seasoning
2 bunches of green onions, chopped
8 oz. white cheddar cheese
8 oz. Monterey Jack cheese
3 tomatoes, diced
1 cup chopped black olives

In a glass dish, spread in layers: (1st. layer) refried beans; (2nd. layer) mayonnaise; (3rd. layer) sour cream over mayo; (4th. layer) sprinkle taco seasoning over sour cream; (5th. layer) green onions; (6th. layer) white cheddar cheese; (7th. layer) Monterey Jack cheese; (8th. layer) tomatoes; and (9th. layer) chopped black olives.

You may substitute any layers of choice. I use black beans instead of refried beans; you can use both if you like. You can also add layer of green chili's or jalapeņo, if you want more heat.

Memories: Mom told us that Grandpa and Grandma Buchanan lived in West Virginia for a while. Grandpa was working in the coal mines there. Mom said she was about 8 years old and went to school there for a couple of years.

Mom and Dad lived in West Virginia for a while too. I recall names like Caretta and War. Dad went there to get work in the coal mines. Doug and Peggy were just small children then. They moved back to Crab Orchard before I was born. We lived in a little tar paper house up the holler from Grandma's old house until I was about four, when we moved into the house where Mom now lives. On our way back from a trip, Peggy, Leon and I took Mother on a little detour and drove her back through those West Virginia coal camp towns. She could remember several areas, and it was lovely seeing those places we had heard about all our lives through her eyes.
