2 lb. honey
1 lb. shelled nuts (peanuts or walnuts)

Directions:
Place the honey in a large saucepan over low heat and cook 20 minutes. Stir constantly to prevent the mixture from sticking to the bottom of the pan. You want the honey to caramelize. The honey is ready when a small drop dropped into cold water solidifies.

(Alternately, you can place the honey in a double boiler and heat for an hour.)

Add the nuts and bring back to a boil. Stir. The mixture should look smooth and wet. Pour the mixture into a jellyroll pan.

When it has cooled cut it into pieces (narrow and about 1 1/2" long.)
