1 Red Bell Pepper
1 Zucchini
1 Yellow Squash
Olive Oil, as needed
Salt & Freshly Ground Black Pepper, to taste
14 oz Loaf Ciabatta Bread
10 oz Container Prepared Hummus

Directions:
Directions:
Slice red pepper, zucchini, and yellow squash into long, thin strips. Drizzle with olive oil and season with salt and freshly ground black pepper to taste. Grill vegetables about 2 minutes per side. Slice ciabatta loaf in half lengthwise and brush both sides with olive oil. Place, cut side down, on the grill to warm the bread. Remove the vegetables and bread from the grill. Spread hummus on the cut sides of the grilled ciabatta bread. Arrange grilled vegetables on top of the bread to assemble sandwich. Top with the other half of the ciabatta, slice and serve.
