2 Tbsp. Butter
1/4 Cup Chopped Onion
2 Cloves Garlic, Minced (1 tsp)
1 Tbsp. Flour
1 3/4 cup Half & Half
2 Pkgs. Frozen Chopped Spinach, thawed, well drained
1 can Water Chestnuts (8 oz.), drained
1 cup Shredded Cheddar Cheese
1 pkg. Dry Vegetable Soup Mix
1/4 cup Shredded Parmesan Cheese

Preheat oven to 425º. Melt butter in a large saucepan over med. heat. Add onion & garlic; cook & stir until onion is crisp-tender & garlic is fragrant, 2-3 mins..
Stir in flour; cook & stir 1 min. Add half & half & cook, stirring constantly, until mixture boils & thickens, about 2 mins..
Remove from heat. Stir in spinach, water chestnuts cheddar cheese & soup mix. Spoon mix in 1-quart casserole dish. Sprinkle with Parmesan Cheese.
Bake dip until it is bubbly & cheese is melted, 10-15 mins.. Serve warm.
