1 single pie crust
3 slightly beaten egg
1/2 cup dark corn syrup
1/2 cup light corn syrup
2/3 cup sugar
1/3 cup butter, melted
1 tsp vanilla
1 1/2 cups finely chopped pecans
Directions:
Directions:
1. Line a 9 inch pie plate with pie crust, and trim.
2. In a large mixing bowl, combine eggs, corn syrup, sugar, butter, and vanilla, mix well. Stir in pecans.
3. Place pie plate on a baking dish, and pour filling into crust.
4. Wrap edges of crust in foil, to prevent over browning, and bake at 350º F for 25 mins. Remove foil, and bake for 20-25 mins more, or until a toothpick inserted in center comes out clean. Cool on a wire rack. Cover and refrigerate within 2 hours.
