Chicken:
1 small bottle of Kraft Zesty Italian Dressing
1 Tbs chili powder
1 tbs Cumin
3 cloves minced garlic
4 chicken breasts, boned
Cook together in crock pot on low for 4 hours, shred and cook an additional 1 hour. Mine cooks faster, about 3 hours, shred and cook an additional 1/2 hour.

Rice:
3 cup water
4 tsp chicken bullion
4 tsp minced garlic
1/2 bunch topped cilantro
1 tsp cumin
1 can green chilies
3/4 tsp salt
1 tbs butter
1/2 med. onion, chopped
3 cups Jasmin rice, uncooked.
Boil water, add all ingred. and cook for 30 minutes or until rice is tender.

Tomatillo Salad dressing:
1 pkg buttermilk ranch dressing powder
3 Tomatillos,
1 cup mayo
1 cup buttermilk
1 cup chopped cilantro, tops only
3 garlic cloves, minced
1/8 tsp cayenne pepper.
Mix in blender and chill.

These recipes taste almost as good as Cafe Rio chicken salad. The dressing is good too. I buy the little chips and the powdered Parmesan cheese from the cafe to serve with mine and serve with homemade salsa.
Salad order: rice, beans, chicken, grated cheese, lettuce, salsa, chips, and Parmesan cheese. The dressing is then added. Each one has there own plate or bowl.
