Ingredients:
Ingredients:
2 lbs. stewing beef
1 large can of tomato juice (minus 1 glass of juice)
2 pks. of onion soup mix
1 tbsp chopped garlic
2 tbsp sugar (cuts the acid in the tomatoes)
3 tbsp minute Tapioca
1 large onion chopped
1 large green pepper chopped
1 small bag of little carrots (easier than having to peel and chop the carrots)
10 mushrooms
6-8 potatoes quartered

Directions:
Directions:
In large roasting pan pour in the tomato juice and mix onion soup mix, garlic, sugar, tapioca into it. Stir in stewing beef (raw)
Chopped onions, peppers, carrots, potatoes and mushrooms. Try to get everything coated with the tomato mixture,
although I know the pan will be pretty full. Put the lid on and pop it in the oven at 250 degrees for six hours. If you happen
to be home you can take it out and stir it every now and then, if only to inhale the wonderful aroma! Should you decide that you
want to make it in the crock pot, just let it cook all day at least 8 hours. Stir 3 to 4 times.

Personal Notes:
*Note: amounts are approximate; you can add extra veggies if you like. I often add more peppers and onions than what I listed above. Also, depending
on the crowd you can add more potatoes too.*
