2 center cut bacon slices, diced
1 c chopped carrot
1/2 c chopped onion
2 garlic cloves, minced
1 tsp paprika
1/4 tsp salt
1/2 tsp cumin
1/4 tsp crushed red pepper
2 1/2 c lower sodium chicken broth
1 c water
2 (15 oz) cans garbanzo beans (chickpeas), rinsed & drained
4 cups chopped fresh kale
1/2 c plain 2 or 0% Greek yogurt
4 lemon wedges (optional)

Cook bacon in a Dutch oven over medium heat until crisp. Remove bacon from pan using a slotted spoon and set aside. Add chopped carrot & onion (I use my food chopper) to small amount of drippings and cook for 4 minutes or so. Add garlic, cook for 1 minute. Add paprika, salt, cumin, red pepper & cook for another minute.
Stir in chicken broth, water & beans; bring to a boil.
Reduce heat & simmer for 20 minutes, stirring occasionally.
Add kale. Cover & simmer for 10 minutes or until kale is tender, stirring occasionally.
Ladle about 1 1/4 cups bean mixture into each of 4 bowls & top each with 2 T yogurt. Sprinkle with bacon & serve with lemon wedge, if desired.

I always double and sometimes triple this recipe and serve as a side for my family. Wonderful reheated. Very hearty, healthy, & delicious. Omit bacon & sauté veggies in olive oil for a vegetarian option. WW pt.s = 2.4 per 1 cup.
