1 lb turkey bacon, diced
1 med. sweet onion, chopped
6 eggs, lightly beaten
4 c frozen shredded hash browns, thawed
2 c cheddar cheese
1 1/2 c small curd fat free cottage cheese

Directions:
Directions:
Preheat oven to 350. In a large skillet, cook diced bacon & onion until bacon is crisp; drain if necessary.
In a bowl, combine the remaining ingredients; stir in bacon & onion. Transfer to a greased 13x9x2 dish.
Bake, uncovered at 350 for 35-40 minutes or until set & bubbly. Let stand 10 minutes before cutting.
OR
If you want to make this the night before, mix all ingredients EXCEPT eggs in a large bowl. Cover & refrigerate. The next morning, mix in the 6 lightly beaten eggs, pour into casserole & bake as directed.
