12 oz blue or gorganzola cheese, crumbled
1/2 c butter, softened
1 1/2 c flour
2 t salt
1 t pepper
1 T water
1/2 c walnuts, finely chopped
1 egg white, beaten

Directions:
Directions:
Blend cheese and butter in mixer on low. Sift together dry ingredients. Add to cheese mixture. Add water. Roll dough into 12" log. Brush with egg wash. Roll log in nuts then roll up in sheet of waxed paper. Chill 30 minutes. Slice into thin rounds. Bake on cookie sheet at 350º for 22 minutes. Cool. Store in covered container in refrigerator. Serve room temperature. Dough and/or crackers can be frozen.
