2 medium sweet potatoes (12 oz. total), peeled
1 Tbsp. plus 1 tsp. olive or canola oil
1/2 tsp. paprika
1/4 tsp. each garlic powder, salt and pepper

Directions:
Directions:
Heat oven to 450 F. Spray a baking sheet with non-stick cooking spray. Cut sweet potatoes into French fries (about 3" long, 1/4 " thick). Place in a large bowl and toss with oil and seasonings. Arrange sweet potatoes in a single layer on a prepared baking sheet. Roast for about 18 minutes, turning once, until browned and tender. Serve immediately.
