3-4 large ripe but firm tomatoes
1 small onion
2-4 tbsp. olive oil (pure or extra virgin)
salt and pepper to taste

Optional: Fresh basil, minced garlic, green bell peppers

Directions:
Directions:
Depending on the size of the tomatoes cut them into medium size wedges. Slice 1/2 medium onion vertically, so that the onion pieces are long strips. Add olive oil and salt and pepper to taste. Can be served at room temperature or chilled.

You need plenty of crusty Italian bread to sop up the beautiful juices in this salad.
