Ingredients:  
1 T oil
1 onion, chopped
2 c squash, cubed (zucchini, yellow or summer)
1 can corn (or Mexican corn)
2 T water
4 oz can green chiles, chopped
1/2 c cheddar cheese, shredded
salt to taste

Directions:
Directions:
In large skillet fry onion in oil till tender. Add squash, corn and water. Cover and cook till tender. Stir in chiles, cheese and salt. Heat just enough to melt cheese.

This is a great recipe to make on a campfire when camping out. Pete's mom made it often.
