2 lbs hamburger or ground round
2 lbs ground pork
1 t cinnamon
1 t ground cloves
1/2 lb ground red chile, dry
2 squirts vinegar
1/2 bottle port wine
salt to taste
oregano to taste
garlic to taste, finely minced

Directions:
Directions:
Mix all ingredients together well using hands. Cover with plastic wrap. Refrigerate 3 days to allow it to ferment. Package into small plastic bags. Freeze. Thaw before using. To use crumble into skillet and fry till cooked. Drain off grease with paper towels.

This recipe is from my grandmother Adeline. She was a great cook! For the ground pork I get a boneless pork shoulder and have the butcher grind it for me. Use Santa Cruz dry red chile found in Mexican section. We use this with scrambled eggs and rolled into a tortilla. Another great way to use chorizo is to stir into deviled eggs (this recipe is in cookbook).
